This weekend has been a complete whirlwind! I gave a wine tour in the South End (More on that sometime soon. I promise!), did massive amounts of errands, shopped, ran, and enjoyed quality time with Bello.
Y’all should know I am the ONLY one who actually calls Andrew ‘Andrew’. To everyone else, he’s ‘Bello’. So, I might as well wean you all in now while this blog is young and fresh.
I haven’t really had any opportunities during the week to do laundry. Essentially this means I have been wearing running clothes past their deadline. Gross. Like, I cannot even begin to explain how gross this is. I should have had my running clothes quarantined. So, I decided that I needed to do some serious retail therapy shopping for more running clothes.
Success! This was one of the outfits I bought. Tina from Carrots ‘n’ Cake recently posted about running skirts. ‘Yay or Nay?’ I have been dying to get a running skirt. I think that not only do they look super cute, they also look as though they are extremely comfortable to run in. I am partial to running capris. I like the feel and the look of capri leggings for running. And all my capris have a little special pocket for keys :) So getting a running skirt was a big leap. I went to Marshall’s and this little number was only $15!!! How did it preform?…..

Meh. It was okay. I actually still LOVE the idea of the running skirt. There are shorts underneath and with this particular skirt the shorts were just waaay too short. So if you can imagine how uncomfortable it would be to essentially be running with nothing on your legs except a small cloth, you’ll be able to imagine why this kinda sucked. I tried on a New Balance running skirt with longer shorts underneath the skirt. Buying that New Balance skirt will be the FIRST thing I do after work tomorrow! I like this white Avia skirt here in the picture, or SKORT, if you will, but I will only wear it on short runs.

Hahaha Again, somehow Bello accompanied me on a short two mile run ‘against his will’. He says it was because he was afraid I would get mauled running around in this skirt. But I know it’s really because he knows it did him some good to get his blood flowin’ on a lazy Sunday ;)
Last night! I have had this recipe for Southwestern Baked Corn bookmarked since the end of May! As soon as Jenna from Eat Live Run posted this recipe I KNEW I had to save it. Jenna’s recipes always turn out incredible. This baked corn dish with coconut milk, red bell and jalapeno peppers is divine. Baking it in a cast iron skillet really is best I think… but I betcha a glass baking dish would do just fine!

I served this last night with brown rice (for Bello) and Broccoli (for me) and simple baked Haddock (just drizzled with a little olive oil and a sprinkle of creole seasoning).
After our quick 2 mile run this afternoon we have been in 100% relaxation mode! :) Isn’t that what Sundays are for!? I concocted a delicious lime daiquiri (Don Q rum, lime juice, Truvia, lemonade Vitamin Water Zero, and lots of ice: Blended!).

House is clean, laundry is done….. I’m off to sing some Struass and eventually make dinner (and probably another cocktail… not gonna deny that!).

I am glad you mentioned Marshalls for running clothes because I desperately need a few things so I can rotate clothes… I was thinking I was going to have to go to Olympia or something but I will definitely check Marshalls first (yay discount clothes!) That baked corn looks so yummy too btw!

Ohhh Marshalls or T.J. Maxx is GREAT for getting running clothes. So much more inexpensive than places like City Sports or Olympia.
The baked corn was the bomb and so easy to make!!

Oooo I never thought of using Vitamin water lemonade in a daiquiri?! What a great idea! Have you tried Bethanny’s SkinnyGirl Margarita’s? It’s good but it’s not sweet enough for me so I like to add in Splenda to sweeten it up!
Jenna’s corn looks insanely delicious! I love all her recipes! :)

I have heard so many good thinks about SkinnyGirl Margarita’s…. I also saw she has a Sangria out as well! Have you had that?? I am such a control freak when it comes to making cocktails at home… I would probably doctor it up as well!

No I haven’t tried the Sangria yet but I’m so wanting to! I haven’t seen it at my chain grocery store yet (Safeway) but I’ve heard they have it at Costco??!! We must try it! However I’m sure we’ll want to doctor that one up too ;)
